Quick And Spicy Cucumber Pickle

Ingredient Notes

  • Salt: This is carrying all the flavour but is also extracting a high amount of moisture in the cucumber. This will give the cucumber a better bite and mouth-feel. Use sea salt flakes!
  • Hot Sauce: I use Encona hot sauce as the version of the cucumber pickle I’m doing has Caribbean roots. You could change to sriracha or gochujang depending on the flavour profile you want.


Cooking Tips

  • Mandoline: This helps for consistency and speed. All your cucumber slices will be the same thickness and you won’t get carpal tunnel cutting 100+ slices. This is only optional though. I sometimes just stick some music on and cut with a knife, a good time to improve those chefy skills.

This quick and easy pickle can be made in minutes and can be eaten with sandwiches, curries, or even on its own as a salad.

  • Mandoline (optional)


  • 1 Large Whole cucumber
  • 1 tsp Sea Salt
  • 1 tbsp Caribbean hot sauce (Encona)


  • Cut the cucumber into even thin slices
  • Add cucumber to a large container
  • Sprinkle 1 tsp of sea salt over the cucumber
  • Massage the sea salt into the cucumber and make sure it is evenly distributed
  • Add 1 tbsp of hot sauce over the cucumber
  • With a fork/utensil move the hot sauce so it covers all over the cucumber (DO NOT use your hands)
  • Let it marinate up to an hour in the fridge and you're done! Serve with curries, sandwiches, wraps or for your new morning pick me up
